This year, Pancake Day takes place on Tuesday, February 21st and it marks the start of the build-up to Easter. Here is our favourite recipe!
Ingredients:
Makes 10-12 pancakes
100g plain flour
2 large eggs
1 tbsp caster sugar
250ml cold milk
2 tbsp melted butter, cooled
a knob of butter, for frying
Method:
Sift the flour into a bowl with a pinch of salt and make a well in the middle. In another bowl, whisk the eggs with the sugar, milk and melted butter. Combine and pour into the well. Using a whisk, mix the liquid into the flour until you have a smooth batter
To cook your pancakes, heat a teaspoon of butter until hot and foamy. Add 2-3 tablespoons of batter for each pancake, and swirl around the pan until the base is evenly covered.
Cook each pancake for a minute and a half or so, then flip over for another minute on the other side.
Add a squirt of lemon and a sprinkling of sugar, or whatever your favourite topping is!
Tip: If you are making lots, layer them between sheets of baking paper until you are ready to serve!
